Mount Kerinci is one of many volcanoes in Indonesia, a 40,000-kilometer horseshoe-shaped series of 452 volcanoes that are part of an almost continuous dance of plate movement. The historical eruptions of Kerinci Mountain have made the surrounding area lush with a deep source of fertile volcanic soil. When it arrives at the Sungai Lintang facility, the newly harvested beans begin to clean and pulp them and put them in fresh, water fermentation tanks for at least 12 hours. It is then washed and sun-dried on terraces as well as in temperature and humidity controlled greenhouses with raised beds.
The beans are then sorted first by mechanical gravity separator and then by hand a second time.
